Hey, hey, hey!

First of all, I am sorry it has been so long since my last post. I was planning on posting during Spring Break but I was just enjoying relaxing and letting my creative juices flow too much and I decided to take a step back. BUT! That only happened because it was break and I just decided to escape from real life all together. As of today, we are back in business and back to our regularly scheduled posts! (Which is Tuesday & Saturday if you haven't picked up on that yet!)

Secondly, if you were checking back in for my ColourPop Haul & Review part 2 ... that just isn't happening today. I wasn't feeling it and decided to share something I have been super inspired to do with you guys instead!

Go check it out HERE!) you probably saw my post yesterday of the Trader Joe's grocery shopping list for my first step leading to doing Whole 30! If you don't know what Whole 30 is, you can read more about it here

I made both a breakfast & lunch recipe that follows the Whole 30 guidelines that I, of course, found on Pinterest! The breakfast recipe was a Chia Seed Pudding type meal to replace yogurt in the morning. I am trying (emphasis on trying, here) to go dairy and gluten free as often as possible. This recipe nailed it with both of those stipulations. I also love that you can make it ahead of time and it is ready to just grab & go! I eat a lot of granola bar type things in the morning because I have to leave the house by 6 a.m. and I barely have time to brush my hair, let alone make a meal, before I leave, so this super healthy alternative seems great!

The lunch recipe I made was a Ranch Chicken Salad. Now let me tell you this, this stuff it GOOD. I made a different recipe a week or so ago and it was alright. At best. I have high expectations for my chicken salad. This recipe though ... life changing. I ate it for lunch today and have it already put in mason jars for the next two days and I am PUMPED to get to eat it again and again. Today I ate it on Trader Joe's Gluten Free Bread but I packed cucumbers to eat it with for the week. It is that good. I could eat it straight from the bowl, honestly. (Which I may or may not have done. #noshame) 

I am still trying to figure out the best way to do dinners following the Whole 30 regime. The boy and I have different schedules and it makes meal prep and planning a tad bit difficult but I am grabbing dinner with one of my best friends this week who has already done Whole 30 and I can't wait to pick her brain all about it!
